Cauliflower Fettuccine Alfredo
Kids will love this version because it looks just like the real thing, but there’s a lot of one specific hidden veggie in the sauce. Cauliflower! It doesn’t change the taste or the look, but really gets the veggie intake up for the kids. Take your favorite Fettuccine Alfredo recipe and puree in as much cauliflower as you can!
Beet Fettuccine Alfredo
Did you know there is such a thing as beet pasta? Mix the beet pasta and the cream sauce and you can have a Valentines Day pink meal-right in front of you! You can buy beet or any veggie pasta online. Here’s an option we like:
Zucchini Fettuccine Alfredo
Everybody is paleo or carb free these days so naturally, we made Fettuccine low carb. ZOODLES! Noodles out of zucchini. Take a grater or a peeler and follow Chef Erik’s step by step instructions
- Make long peels down the length of the zucchini or use a spiralizer if you have it and follow the directions.
- Saute your zoodles in a pan with a little avocado oil or olive oil over medium heat.
- Serve with your favorite Alfredo recipe.
